With this basic recipe create any delicious moist whole wheat batch of muffins!
3 cups fruit (sliced/diced/mashed)
1 1/2 cups whole wheat flour
1 cup oats
1/2 tsp. salt
1 tsp powder
2 eggs
1/2 cup water
1/2 cup oil
1 tsp cinnamon
Mix dry ingredients. Add and mix wet ingredients. Fold in fruit.
Fill muffin cups 2/3 full. Bake in oven at 375 for 15 minutes. Makes 18 Muffins.
Ideas:
Banana (with splash of vanilla and chopped nuts)
Blueberry (with lemon zest or juice)
Zucchini & vanilla
Apple Chunks
Pear Chunks
Peach/Raspberry
