Left over raw veggies- tossed in seasoning. Baked. Super simple and super delicious.
4 red potatoes cubbed
2 cups chopped broccoli
2 cups carrots
1 cup diced onion
1/3 cup olive oil
1 tbls sea salt
1/4 cup mushroom soup mix
1 tbls onion powder
1/2 tsp dill
1 tsp italian seasoning
1/4 tsp pepper
Microwave the potatoes and carrots for 3-5 minutes until cooked slightly. Then take all the chopped veggies in a bag. Pour olive oil and shake to coat. Pour in seasoning and shake again to coat.
Bake at 350 for 30-45 minutes.

Mashed Squash & Potatoes
1 Acorn Squash
4 cups potatoes
1 cup carrots
1 cup milk
1 tsp salt
1/2 tsp pepper
1 cup shredded cheddar cheese
Slice squash in half. Spoon out seeds. Microwave for 8 minutes or until mushy. Make a slit in the potatoes and microwave for 5-10 minutes (depending on size of potatoes)- until mushy. In bowl or pot MASH! Add milk, cheese, salt and pepper to your desired taste.
**You can also do this with sweet potatoes instead of squash! It's a great use if you have extra and you can freeze it too!
