Taco Casserole



Serves 4
Leftovers: yes/ reheat okay
Freeze: no
Prep/Cook time: 45 minutes

Layer in 1 quart casserole:
3 cups cooked rice (I use whole grain brown fast cooking rice)
1 can black beans
1 cup salsa
1 Ib browned ground beef cooked with 1/4 cup chopped onion and taco seasonings
2 cups frozen corn
Crushed tortilla chips
1 cup grated cheddar cheese

Bake at 375 for 20 minutes.
Serve over lettuce. Top with sour cream and/or hot sauce.
