Chicken & Rice Casserole

This is one of my favorite chicken and rice dishes. It makes a very moist chicken breast and nummy rice. Will feed 4 easy!
1/2 cup uncooked brown rice
1 can cream of mushroom soup
1 tsp cumin
2 tsp onion powder
1 tsp pepper
1/2 tsp chili powder or hot sauce
1/2 cup milk
2 cups frozen peas (you can do any frozen veggie of choice)
2 chicken breasts
Preheat oven to 350. In 9x9 pan mix rice, soup, milk, veggies and seasonings. Place chicken breasts in pan and cover with rice. Cover and bake for 45 minutes. Uncover and bake for 15 more.


  1. Have you frozen this one? I think I may give it a shot! Looks yummy!

  2. I haven't tried freezing it because I eat it all! Let me know if you do and how it works out because I would easily make 2 batches and save one for later. This is one of my favorites!
