Whole-Wheat Apple Breakfast "Cookies"



I think these taste like nutrigrain bars!

Makes:36 cookies

Ingredients
2 cups Apples (cored and chopped)
1/2 cup Brown Sugar
1/2 cup applesauce (OR 1/4 cup honey OR 1/4 cup apple juice and 2 tbls karo syrup)
1/2 Butter
3 egg whites OR 2 eggs
2 cups oatmeal
2 cups whole wheat flour
1/4 tsp salt
1/4 tsp baking soda
2 tsp cinnamon
1 tsp allspice
1/2 cup dried cranberries OR raisins

Directions
Preheat oven to 375 degrees.
Core and chop apples leaving the skin on. Set aside.
Beat brown sugar, honey and butter in mixer until fluffy. Beat in egg whites one at a time. Mix well.
Add oatmeal, flour, salt, baking soda, allspice and cinnamon. Mix well.
Fold in dried cranberries and apples.
Drop in heaping tablespoonfuls onto ungreased pan.
Bake for 10-12 minutes.
