As part of Kraft's First Taste Program member I received a high value coupon for the new "100- Calorie Oreo Cakesters". They were absolutely delicious little cake like cookies with a light airy cream center. How could you go wrong?? Well the price is outrageous! You get 6 "packs" for $3. Each pack is 4 bite size cookies that are about the same size as ONE cookie combined... so 6 cookies for $3. I searched high and low for a similar recipe. I found one called Whoopie Pies at www.eatbetteramerica.com . I took the recipe and modified it slightly.
These cookies are AWESOME and only 75 calories per cookie.
1 cup flour
1/4 cup unsweetened cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/4 cup margarine or butter
1 egg white
1/2 cup milk
1/4 cup unsweetened cocoa

Meringue
1 egg white
1/4 cup sugar
1 tsp vanilla
1/2 cup chocolate chips
Heat oven to 425°F.
In medium bowl, combine flour, cocoa, baking soda and salt.
In large bowl, beat sugar, margarine and egg white with electric mixer on medium speed 2 minutes or until fluffy. Stir in flour mixture. Stir in milk just until blended.
Drop dough by rounded tablespoons onto large ungreased baking sheets to make 24 cookies. Bake 6 minutes or until tops spring back when lightly touched.
Place baking sheets on a rack to cool completely.

Meanwhile beat on highest speed egg white, sugar and vanilla for 10 minutes until fluffy.
Top cookies with dallop of meringue and a few chocolate chips. Broil at 500 for 3-4 minutes until meringue is lightlybrowned.
