Chocolate-Raspberry Mousse cookies


These are AMAZING! The reason I call them mousse cookies is the batter is thick and airy just like mousse. They have a similar taste to chocolate covered cherries. Makes a ton of cookies AND get this.... 90 calories & 13 g of carbs per cookie!! For those of you not counting calories, this is about 1/2 the calories and carbs a regular chocolate chip cookie has and a only 1/3 of a brownie!

makes:4 dozen cookies


1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter, softened
1/3 cup plain yogurt or oil
2 eggs
1 teaspoon vanilla
2 1/4 cups flour
1/2 cup baking cocoa
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup dark or semisweet chocolate chips
2 cups frozen raspberries -- partially thawed (or tart apples, strawberries & lemon juice)
2 cup oats

1 Heat oven to 350°F. Spray cookie sheets with cooking spray. In large bowl, beat sugars, butter and yogurt with electric mixer on low speed until blended. Beat in eggs and vanilla.

2 Beat in flour, cocoa, baking soda and salt until well blended. Mix in 2 cups raspberries until well blended. Stir in oats and chocolate chips. Drop by heaping tablespoon size about 2 inches apart onto cookie sheets.

3 Bake 10 to 12 minutes or until set.
