Jacob doesn't even like oatmeal (he's says it's too mushy) but he will eat this!
2 cups oats
2 cups chopped apple
1/3 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup applesauce (pureed apple or apple juice also works)
1/2 cup milk
1/4 cup oil or plain yogurt
1 egg
1/2 cup raisins (optional)
In bowl mix and add each ingredient. Pour into greased pan or bowl (Just needs to be oven safe). A 9x9 pan will give you a thinner crispier oatmeal and if you use a pyrex bowl it will be mushier. Bake at 350 for 35 minutes.
You can also add any of your favorite fruit for an even healthier meal that will also last longer! Blueberries, strawberries, raisins, banana etc.
This recipe is extremely flexible. I didn't have apples or apple sauce, so I used a can of pears and the pear juice! Just keep the liquids and solids equal and it will turn out fabulous!
TIP: Prepare the night before and pop in the oven when you wake up.
