Pies Galore!





Double Pie crust

5 cups fruit
1/4 cup whole wheat flour
1/2 tbls lemon juice
1 cup sugar
1 tsp cinnamon (opt)
1/2 tsp allspice or nutmeg (opt)

For apricot, strawberry, peach, apple, rasp. or any combo of those:

Prepare double pie crust.
Toss sliced fruit in sugar, flour, cinnamon and allspice. Place in raw pie crust. Sprinkle lemon juice on top. Dot with butter. Add top pie crust.
Bake 400 for 50 minutes.

For grape pie:

Prepare double pie crust.
Put grapes in food processor. Add to pan on med/low heat. Stir in lemon juice. Take off heat and add 1/2 cup brown sugar, 1/2 cup white sugar and 1/2 cup flour. Place in pie crust. Top with crust. Bake at 400 for 50 minutes.

For pear pie:
Prepare double pie crust.

Layer thinly sliced pears in crust. Use only 1/2 cup sugar. Sprinkle over each layer sugar, cinnamon and allspice. Sprinkle lemon juice on top. Add top crust.
Bake at 350 for 40 minutes.

For cherry pie:
Prepare double pie crust

4 cups pitted/chopped cherries (I puree mine as well... completely optional)
1 cups white sugar
1/4 cup flour
butter

Place the cherries, sugar, and flour in a medium size non-aluminum saucepan. Bring to a boil over medium heat, stirring constantly. Lower the heat; simmer for 1 minute, or until the juices thicken and become translucent. Remove pan from heat. Pour the filling into the pie shell. Dot with butter. Cover with top crust.
Bake in a preheated 375 oven for 50 minutes.





For Single-Serving Freezer Pies:


I often have a mass amount of fruit that needs to be used immediately. I make these mini-pies that freeze great and are perfect for pulling out of the freezer when you need a quick dessert!


Prepare double pie crust. Roll out dough until it is very thin. Use a wide mouth mug to cut out 18 circles. Lay in well greased muffin pans. Set aside.



Mix:

5 cups fruit

1 tbls cinnamon

1/2 cup sugar

Let sit.



Mix:

1/3 cup oats

1/3 cup brown sugar

1/3 cup whole wheat flour

and cut in...

3 tbls butter


Put fruit in crust "cups". Top with a spoon full of the oat topping
Place in freezer for a couple hours. Take out and with a fork pop out the single serving pies into a large gallon size bag. Return to freezer.

To bake take out # of pies you'd like. Heat oven to 375 and bake frozen pies for 40 minutes.
