Almond Cookies

Absolutely delicious. Easy and you can try so many variations!! My favorite is the cherry / almond! These would make great plain "sugar" cookies too. Spread some icing on them and enjoy!

Mix:
1/2 cup butter
1/2 cup coconut oil
1/3 cup sugar

Add & mix:
1 tsp almond extract

Add & mix:
1/2 cup ground oats
1 2/3 cup flour
1/4 tsp salt

Chill for 10 minutes or more. Pat with hands or gentle roll out with rolling pin to 1/4" thick. Use pizza cutter to cut in 1" strips. Bake at 350 for 14-16 minutes until set (not brown). Remove to cooling racks.

For Cinnamon Sugar topping: Sprinkle with powdered sugar (1/4 cup) and cinnamon(1/4 tsp) while still warm.

For Cherry Almond Bars: Add in 1/2 cup dried cherries with flour. Drizzle with icing (1/3 cup powdered sugar, 1/2 tsp lemon juice or extract and add milk to achieve desired consistency)

For Chocolate Hazelnut Bars: Replace oats with 1/2 cup crushed hazelnuts. Drizzle with melted chocolate or spread Nutella on them.
