Mashed Squash & Potatoes



1 Acorn Squash
4 cups potatoes
1 cup carrots
1 cup milk
1 tsp salt
1/2 tsp pepper
1 cup shredded cheddar cheese

Slice squash in half. Spoon out seeds. Microwave for 8 minutes or until mushy. Make a slit in the potatoes and microwave for 5-10 minutes (depending on size of potatoes)- until mushy. In bowl or pot MASH! Add milk, cheese, salt and pepper to your desired taste.

**You can also do this with sweet potatoes instead of squash! It's a great use if you have extra and you can freeze it too!
