Ramen Chicken Salad

Great for potlucks, BBQ's or just home eatin'! A great tasty blend of ingredients you normally have at home.



3 cups chopped cooked chicken

1 cup finely diced apple

2 cups almonds (sunflower seeds or peanuts work too)

2 cups finely diced celery

1/2 cup chopped onion

1 cup chopped grapes

2 cups mayo

2 tbls lemon juice

3 pkg. crushed ramen noodles



Mix all together except ramen noodles. Add noodles right before serving to keep crisp.

Broccoli & Chicken Salad



This is delicious alone (for a potluck) or in a sandwich! It's very healthy too and a good way to sneek in veggies for the little ones.

2 cups shredded roasted chicken (I use leftovers when we have a roasted chicken! It's delicious and a great way to use leftovers to make another amazing meal!)
2 cups finely chopped raw broccoli
1 cup finely chopped apples
1/2 cup sunflower seeds
1/2 cup raisins
1 cup mayo

Mix!

Nana's Potato Salad



My Nana taught me how to make her delicious potato salad. I make a big batch usually when we have lots of people over and are BBQ'ing.

8-10 lg. potatoes chopped with skin on and boiled for about 10 minutes until desired softness
5 hard boiled eggs diced
5 stalks of celery chopped
2 cups mayo
2 tbls mustard
1/4 cup pickle juice or diced pickles
salt and pepper to taste

Mix in large bowl!
Serves 10-12

Orange Pineapple Jello Salad

This is one of my favorite dishes when visiting my Nana's! Thank you Nana!

1 Package Orange Jello
1 small can crushed pineapple
1 Cool whip

Drain pineapple and set aside. Prepare jello according to package. When jello is NEARLY set stir in pineapple and cool whip. Let set for another 1-2 hours.

Make a double batch for a huge bowl of light-fluffy-goodness at a potluck!

Chinese Cabbage Salad

1 medium cabbage chopped
3 green onions chopped
1/4 cup sesame seed
1 package top ramen noodles
Oriental salad dressing to taste

Double, triple or quadruple to make a great, inexpensive church potluck dish!
