Mix in bowl:
1 cup rolled oats
1/3 cup honey
1/2 cup crunchy peanut butter
1 cup shredded coconut
1/2 cup ground chocolate chips
1/2 cup ground peanuts
1/4 cup cocoa powder
1 tsp vanilla
1/4 cup melted coconut oil
Spoon evenly into muffin pan and place in fridge. Let harden and remove from pan. Keep refridgerated or frozen and enjoy!

Make Ahead Dinner Rolls
Super easy and they tasted great!
Prepare Ahead Dinner Rolls
(good for Thanksgiving or Easter when you have a lot going on)
1 cup warm water
4 1/2 tsp yeast
1 tsp honey
1/2 c melted butter
1/2 c sugar
3 eggs
1 tsp salt
2 1/2 c white flour
2 c ww pastry flour
Mix all ingredients in a bowl and immediately chill 2 hours-4 days. When ready to bake take golf ball sized pieces, roll and place squished together in a greased 9x13 pan. Let rise 1 hour and then bake at 325 for 15-20 minutes until golden brown.

Dinner RollsHoney Wheat Dinner Rolls
Sweet. Light. Fluffy.
Add into bread machine:
1 1/4 c. warm milk
1 beaten egg

1 cup ww pastry flour

Run through dough cycle. Remove from machine and take large golf ball sized pieces, roll them and place on greased cooking sheet. Let rise for 1 hour. Bake at 350 for 15 minutes or until golden brown.
BreadLight Oat Bread
Put into machine on dough cycle:
1 1/4 cups water
2 tablespoons margarine
1 teaspoon salt
1 1/2 cups white flour
1 1/2 cups ww pastry flour
1/2 cup rolled oats
2 tablespoons brown sugar
1 1/2 teaspoons yeast
Remove from machine and roll up into a greased bread pan. Let rise 1 hour and then bake in preheated 350 oven for 30 minutes or until golden brown.
Cheesy Garlic Bread
1 1/4 cups warm water
1 1/2 cups ww pastry flour
1 1/2 cups white flour
2 tbls powdered milk
2 tbls white sugar
1 1/2 teaspoons garlic salt
2 tbls butter, softened
1/4 cup Parmesan cheese
4 tsp italian seasoning
1 tablespoon yeast
Remove from machine and roll up into a greased bread pan. Let rise 30 minutes and then bake in preheated 350 oven for 30 minutes or until golden brown. (OPT: You can top with some shredded cheddar cheese and serve with garlic butter!)
**Use the cheesy garlic bread recipe to make Focaccia bread. Just roll the dough out onto a greased pizza pan- top with cheese and herbs and immediately stick in oven at 450 for 15-18 minutes.
Cinnamon Rolls
1 cup warm milk
2 eggs, room temperature
1/3 cup butter melted
2 cups ww pastry flour
2 1/2 cups white flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons yeast
Remove from machine and roll into a giant rectangle. Spread the filling within 1 inch of the edges and roll up. Slice rolls and place into a greased 9x13 pan. Cover and let rise for 30 minutes. Bake in preheated oven at 400 for 15 minutes. OPT: Spread icing. Serve warm.
For cinnamon filling: 1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened

Homemade Goldfish

Modified.
Pulse 1 cup flour, 4 tbls cubed butter, 1 1/2 cup cubed cheddar cheese, 1/2 cup parmesan cheest, 1/2 tsp salt, and 1/2 tsp pepper together using a food processor until the mixture resembles coarse meal.
Pulse in 4 tablespoons of water, one tablespoon at a time, and only enough so that the dough forms a ball and rides the blade. Remove, wrap in plastic, and chill for 20 minutes or up to 24 hours.
Line 2 baking pans with parchment paper and set aside. Roll the dough out to 1/8-inch thickness. Cut out as many crackers as possible. Place them 1 inch apart on the prepared baking pans.
Bake at 350 until golden and crisp - 15 to 20 minutes.
Enjoy!

Pop corn!
Homemade popcorn is the best! Buy a bag of kernals and you have a healthy-quick snack for the family, guests or kids.
KETTLE CORN
Place a large 5qt pot on the stove over medium heat.
Add 1/4 cup oil (I use olive or grapeseed and it doesn't change the taste)
Place 3 kernals in the oil. Once they pop the oil is heated to the correct temp.
Pour in 1/2 cup kernals and 1/4 cup sugar. Constantly mix with wooden spoon until the popcorn begins to pop. Place lid on top leaving place for steam to come out.
Allow to pop until the popping slows down about 1 per second. Immediately take off heat.
Pour popcorn onto baking sheet and immediately place the pan in the sink and fill with water and soap.
Separate the popcorn with a fork and sprinkle with salt.
Store in airtight container.

Banana Muffins & Bread
Makes 12 muffins or 1 loaf
Mix:
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 tsp allspice
1 tsp cinnamon
Add and mix in:
3-4 mashed bananas
3-4 mashed bananas
1/4 cup sugar
1/4 cup brown sugar
1 egg
1/3 cup canola oil
1 egg
1/3 cup canola oil
1 tsp vanilla
Mix and top with chopped walnuts (if desired).
Pour into well greased 12 muffin pan OR 1 well greased loaf pan. Bake at 375-- muffins for 20 minutes and loaf for 35 or until knife comes out clean when inserted in the middle.

Homemade Whole Wheat Crackers
We were out of crackers, for the famous crackers and cheese, and I thought, "How hard can it be to make crackers?". So I looked online and found this website: http://appetizers-finger-food.suite101.com/article.cfm/how_to_make_crackers
Below is there recipe for crackers. IT IS SO EASY AND DELICIOUS! At the bottom are my suggested seasonings.
•2 Cups whole wheat flour
•1 tsp. baking powder
•1/2 tsp. salt
•2/3 Cup warm water
•1/3 cup olive oil
1.Preheat the oven to 400.
2.Lightly grease two large cookie sheets. Combine the dry ingredients, and then stir in the water, oil and mix until a smooth dough forms.
3.Divide the dough in half and flatten each half on a cookie sheet. Use a small rolling pin or even your fingers for a rustic, uneven look. Once the dough is spread thin, use a sharp knife or a pizza cutter to cut the dough into squares. The elasticity in the dough will make the crackers shrink slightly and pull away from each other; this makes them easy to bake without sticking together.
4.Brush lightly with an egg wash (one egg white and 2 tablespoons of water) or spray lightly with olive oil. (OPTIONAL)
5.Sprinkle with the topping of your choice. Experiment with your favorite flavors, or try one of these variations below.
6.Bake for 12-14 minutes until the crackers are golden and crispy.

Cresent Rolls
I've made these before for special occasions and they are AMAZING. Totally worth the time; especially if you do a double batch. Money Saving Mom posted the recipe on her site and it inspired me to make them again.

Make-Ahead Butterhorns (makes 32 rolls)
2 Tablespoons dry yeast, heaping
1/3 cup warm water (110-115 degrees)
9 cups flour, divided (I use whole wheat, but you can use any mixture of flours)
2 cups warm milk (110-115 degrees)
1 cup butter, melted
1 cup sugar (we substituted sucanat)
6 eggs
2 teaspoons salt
3-4 Tablespoons butter, melted
In a large mixing bowl, dissolve yeast in water. Add 4 cups flour, milk, butter, sugar, eggs and salt. Beat 2 minutes or until smooth.
Add enough remaining flour to form a soft dough. Turn onto floured board and knead lightly. (Or, knead in mixer until sides of bowl are clean, then knead two more minutes.)
Place in a greased bowl, turning dough once to grease top. Cover and let rise in a warm place until doubled (1-3 hours).
Punch dough down and divide into four equal parts. Roll each part into a 12-inch circle and brush with melted butter.
Cut each circle into 8 pie-shaped wedges.
Roll up each wedge for wide edge to tip of dough and pinch to seal. Place rolls, top down, on baking sheets and freeze. When frozen, place in freezer bags and keep frozen until needed.
To bake: Take out as many frozen rolls as you’ll need and place them on a greased baking sheet. Thaw for five hours or until doubled in size. Bake at 375 degrees until lightly browned. Brush with melted butter as soon as they come out of the oven. Remove and serve immediately or cool on wire racks.

Corn Bread

1/2 cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
Directions
1.Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
2.Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
3.Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

• 1 cup vegetable oil
• 3/4 cup orange juice
• 3 1/2 cups all-purpose flour
• 1 1/2 teaspoons salt
• 2 teaspoons baking soda
• 2 teaspoons ground cinnamon
• 2 teaspoons ground nutmeg
• 1/2 teaspoon ground allspice
• 1/2 teaspoon ground cloves
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Wash sweet potatoes, slice lengthwise and place on a lightly greased baking sheet. Bake in preheated oven until tender, about 30 minutes. Let cool, peel and mash.
2. In a large mixing bowl, beat together sugar, eggs and oil. Stir in orange juice and 2 cups mashed sweet potatoes. In a separate bowl, mix together flour, salt, baking soda, cinnamon, nutmeg, allspice and cloves. Stir flour mixture into egg/sweet potato mixture until just combined. Fold in pecans if desired. Pour batter into prepared pans.
3. Bake in preheated oven for 1 hour , or until golden brown and a toothpick inserted into center of a loaf comes out clean.

Nummy! The best bread ever! Easy, fast, delicious!
Mix:

1 cup grated cheddar cheese
1 tbls garlic salt
1/3 cup sugar
Add slowly:
1 can/bottle 12 oz beer
Batter will be sticky. Add to greased loaf pan.
Bake in oven at 350 degrees for 30 mins. Take out and brush with melted butter.
Bake for another 30 minutes. Brush again with melted butter.
Best served warm!

Cantaloupe Bread
We grow cantaloupe and have been neglecting our garden. So when we went out, our cantaloupe had over-rippened! It was too soft and sweet to eat so I decided to make cantaloupe bread. I had seen a recipe last year when we were deciding what to do with all of our extra melon, but never got around to it. You don't taste much of the cantaloupe... but it makes a delicious moist bread... almost like pumpkin bread.
3 eggs
1/2 cup vegetable oil
1 cup white sugar
1/2 cup vegetable oil

2 1/2 cups cantaloupe - peeled, seeded and pureed
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon baking powder

2 teaspoon ground allspice or pumpkin spice
1/2 cup diced walnuts (optional)
1 tablespoon vanilla extract
2 1/2 cups cantaloupe - peeled, seeded and pureed
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon baking powder
2 teaspoons ground cinnamon
2 teaspoon ground allspice or pumpkin spice

Makes 2 Loaves
Beat 3 eggs until foamy
Add and beat:
1 cup oil
2 cups sugar
2 cups grated zucchini
1 tbsp vanilla
Add and mix:
3 cup flour
1 tsp salt
1 tsp soda
1 tbsp cinnamon
1/4 tsp baking powder
Chopped nuts (if desired)
Pour into greased loaf pans (9x13 pan works too if you don't have loaf pans OR muffin pans). Bake at 325 for 1 hour.

No-Knead Quick Herb Rolls
Makes: 12 muffins
Freezes: Great
Prep/Cook: 1 hr 45 min (mostly rising time)
In a bowl mix 2 tbls shortening, 3 tbls sugar and 1 cup hot water.
Mix 1 pkg yeast (or 2 1/4 tsp yeast) Let proof for 5-10 minutes.
Mix in 1 egg, 1 tbls garlic salt, 2 1/4 flour, 1 tsp italian seasoning.
Cover with hot-wet towel and let rise for 1 hour.
Flour hands. Punch down.
Separate into well greased muffin pan.
Fill cups 2/3 full.
Allow to rise 30 minutes.
Bake for 10 minutes at 425
Tips: Before I bake I top with shredded cheese and more garlic salt. These are delicious and SO easy to make! I usually make 2 batches and freeze in qt. size bags. I only put 4 muffins in each bag as that is how many we eat in one meal.

Biscuits
From Bettycrocker Cookbook
2 cups flour
1 tbls baking powder
2 tsp sugar
1/2 cup shortening, margarine or butter (remember if it is salted butter/margarine to OMIT the salt)
1/4 tsp salt
2/3 cup milk
In bowl stir together flour, powder, sugar, and salt. Cut in shortening until mixture resembles coarse crumbs. Mix in milk all at once. Stir until dough clings together. (May need more milk)
On lightly floured surface knead dough gently. Roll of pat to 1/2 inch thickness. Cut out biscuits with cookie cutter, cup or knife.
Transfer biscuits to a baking sheet. Bake in oven at 450 for 8-10 minutes until lightly brown. Makes 8 large biscuits.
