Herb-Lemon-Garlic Marinade
4-6 Pork Pieces
3 tbls olive oil
3 tbls lemon juice
3 tablespoons water
1 teaspoon lemon zest
2 garlic cloves, minced
2 teaspoons dried thyme
2 teaspoons rosemary
2 teaspoons sage
2 teaspoons marjoram
Salt and pepper, to taste
Spicy Pork
Coats 6 pork pieces.
3 tablespoons chipotle
2 tsp diced chili peppers
1/3 cup lime juice
1/4 cup extra-virgin olive oil
2 large cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper

BARBECUE PORK SKILLET
4 top loin pork chops
¼ c. low-fat Italian dressing
¼ c. barbecue sauce
1 t. chili powder
In large non-stick skillet, brown pork chops on one side over medium-
high heat; turn chops and add remaining ingredients to pan stirring to blend. Cover and simmer for 6-8 minutes. Serves 4.
Breaded Pork
Pound pork pieces to 1/4 inch thick
Sprinkle with salt and pepper
Dip in:
1/2 c. flour
Then...
3 eggs
Then...
1 1/2 c. bread crumbs
Heat 1 1/2 tbls oil and 1 1/2 tbls butter in pan over med/high heat.
Place pork pieces in pan. Cook on each side for 6-8 minutes.

Homemade Pesto for a year!
Plant 1 basil plant in the spring and pull out in the fall. You will have pesto for an entire YEAR.
Grind in blender or food processor:
3 cups basil leaves
3 cloves garlic (4 tsp minced garlic)
1/3 cup parmesan
1 cup olive oil
1 tsp salt
2 tsp pepper
1 tbls lemon juice
Spoon the pesto into ice cube trays. Cover trays and freeze for one day. Next day, pop out pesto "icecubes" and place in ziplop baggy in the freezer.
1 Icecube = 2 tbls pesto = enough for a pesto dish for 2
2 Icecube = 4 tbls pesto = enough for a pesto dish for 4 and so on...

Taco Seasoning
I purchase bulk bags of Salsa seasoning from azurestandard.com, but you can make your own seasoning at home with these everyday spices. Double or triple to make lots for later.
2 tsp chili powder
1 1/2 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp flour
1 tsp cumin
dried chives or cilantro (optional)

Ten Minute Enchilada Sauce
From Allrecipes
1/4 cup vegetable oil
2 tablespoons flour
1/4 cup New Mexico or California chili powder
1 (8 ounce) can tomato sauce
1 1/2 cups water
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion salt
salt to taste
DIRECTIONS
Heat oil in a skillet over medium-high heat. Stir in flour and chili powder, reduce heat to medium, and cook until lightly brown, stirring constantly to prevent burning flour.
Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly. Season to taste with salt.

In small pan combine:
1 cup BBQ sauce
1 tbls chopped chipotle peppers in abodo sauce
1 tbls honey
1/4 tsp chipotle pepper seasoning
2 tsp minced garlic
Bring to boil and then reduce heat. Let simmer 5 minutes. Coat meat and grill.
