Frittatas


Makes 10 mini single serving frittatas



1 cups finely chopped frozen broccoli

1 1/2 cups diced potatoes

10 thin slices of ham (you can also use turkey or canadian bacon)

1/3 cups diced onion

1/3 cup diced bell pepper

1/2 tsp chili powder

1/2 tsp pepper

6 eggs

1/2 cup milk

1/2 cup shredded cheese


Microwave potatoes for 6 minutes in bowl. Add in broccoli, onion and bell peppers and microwave for an additional 3 minutes. Mix in chili powder and pepper.



Meanwhile preheat oven to 375. Lay the slices of ham in well-greased muffin cups. Mix in bowl eggs, milk and cheese.



Scoop in potato mixture into each ham "cup". Pour spoonfuls of egg mixture over ham cups.



Bake for 25 minutes at 375 or until slightly golden brown on top.

Pie Crust

Single or Double for 9 inch pie plates

Single
1 1/2 cup whole wheat flour
1/2 tsp salt
1/2 cup shortening
water (cold)

Double
2 1/4 cup whole wheat flour
1 tsp salt
3/4 shortening
water (cold)

Combine flour and salt. Cut in shortening until resembles coarse crumbs. Sprinkle with cold water 1 tbls at a time. Toss with fork until forms ball. Roll out dough on lightly floured surface.

Tip: Fold your rolled out pieces of dough hot dog style, then hamburger style (like a paper napkin is folded). Then you can move the dough around, place it into your pie plate and unfold without it tearing.


Quiche- Turkey & Cheddar


Serves: 4 +
Leftovers: Always/ reheats great
Freeze: You can freeze quiche, unbaked or baked. Do not thaw when you take it out of freezer. Just pop in oven!
Prep/Cook time: 1 hr 3o minutes (mostly baking)

Preheat oven to 375

Make Single Pie Crust (or purchase premade crust)
Bake pie crust in oven for 10 minutes or until lightly brown

Mix in large bowl:
4 eggs
1 1/2 cups milk
1 cup parmesan cheese
1/2 package chopped frozen broccoli
1 cup sliced turkey lunch meat
1 cup cheddar cheese
1 tsp pepper

Pour quiche mixture into prebaked pie crust

Dot with butter.

Bake for 50 minutes.
